BAILEY'S IRISH CREAM CHOCOLATE CHIP
1/2 c. butter
1/2 c. granulated sugar
1/2 c. brown sugar
1 tsp. vanilla
1/2 c. Bailey's original Irish cream
2 1/4 c. cake flour
1/2 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. semi-sweet chocolate chips
1/2 c. chopped pecans
Cream butter, sugars and egg until fluffy. Add vanilla and Bailey's Irish cream. Mix dry ingredients and blend into creamed mixture. Add nuts and chips. Drop onto ungreased baking sheets. Bake at 375 degrees for 8-10 minutes. Cool.

Chocolate Baileys Mousse ~
* 4 large eggs
* 1/3 cup sugar
* 1 1/2 cups whipping cream
* 1/4 cup Baileys Irish Cream
* 12 ounces semisweet chocolate Godiva or bittersweet Godiva chocolate
1. Whisk the eggs and sugar together in a metal bowl (I use my kitchen-aid bowl). And set it over a pan of simmering water.
2.Whisk the mixture until it reaches a temperature of 160 degrees (use an instant read or candy thermometer), it should take approximately 5 minutes. Whisk the entire time, being careful not to have scrambled eggs.
3.Remove bowl from the pan of simmering water and place on your mixer and beat with the whisk attachment at medium – high speed until it is cool to your touch(on the outside of the bowl) and very thick. This should take approximately 10 minutes.
4.While beating the egg and sugar mixture, melt your chocolate and cool to lukewarm.
5.In a separate bowl, combine the whipping cream and Baileys together and beat until stiff peaks form.
6.Pour the melted chocolate over the egg and sugar mixture and fold in until blended. Then fold in the whipped cream mixture. I will add a small amount of the cream mixture and blend it in (this will lighten up the mixture a bit) and then fold in the remaining until only streaks of white remain.
7.Place in a bowl, cover with saran wrap and chill till set, overnight.

When I was a little girl my Godmother gave me this lovely chocolate cameo (mine in a pale pink) for Easter. I remember thinking it was almost too pretty to eat. I was mesmerized by it. Trying to figure out how to keep it forever. As I was pondering this my Cat runs by with it in her mouth. lol Now I see that Ladurée the famously exquisite chocolate is making them again. It's made from white chocolate with a praline cream filling. Sadly no pink but, still beautiful.

Chocolate French Toast w/Yogurt & Berries
* 2 Tablespoons powdered sugar
* 3 ½ Tablespoons unsweetened cocoa powder, divided
* 3 Tablespoons granulated sugar
* 3 eggs, beaten
* 1/3 cup 1% milk
* 8 slices of firm white bread*
* 1 ½ cups reduced fat vanilla yogurt
* 1 ½ cups raspberries or sliced strawberries
Stir together 2 teaspoons cocoa with the powder sugar. Place in a sifter or small strainer; set aside.
Stir together granulated sugar and 3 tablespoon cocoa; add beaten eggs and milk; beat well. Pour mixture into pie plate or shallow bowl.
Heat griddle on medium to medium/low heat. Spray griddle with non- stick spray. Dip bread slices in milk/egg mixture, coating all sides. Place bread on hot griddle. Cook 2-3 minutes per side or until lightly browned. Cut slices in half diagonally.
Serve Hot. Sift or sprinkle plates with cocoa and powdered sugar mixture. Arrange slices of French toast on cocoa/sugar sprinkled plates, sprinkle with additional cocoa/sugar. Stir yogurt until smooth and creamy; spoon over French toast; top with berries.
A nice lighter twist to French Toast - perfect for chocolate lovers. Serves 4
*Firm bread, stale bread (but not moldy), French bread, or bread which has set For a few days works best with this recipe.

Although Pierrot Gourmand has been making quality sweets since 1892, it is in 1924 that the first lollipop was invented by two Parisian confiseurs who had the idea of inserting a little wooden stick inside their caramel so children would not get it on their hands. Pierrot Gourmand lollipops are to this day a fixture in every French boulangerie, where they beckon children from their display in a porcelain bust of the clown Pierrot. The flat, tear-shaped lollipops now come in four fruit flavors (cherry, raspberry, lemon, and orange) in addition to the classic and delicious milk caramel.

I'm feeling very French today with Gigi on the television. I might have to follow it with Amelie and Chocolate. To set the mood why not try Creme Brulee pancakes. I love themed nights.

This pancake has the flavor and texture of a rich creme brulee dessert. Watch it puff up as you cook it before it settles into a rich, thick pancake. Serve with a sprinkle of powdered sugar and fresh fruit. This is like a cross between a pancake and a souffle. Great company breakfast dish.
* 2 1/2 tablespoons butter
* 1 1/4 cups french vanilla powdered coffee creamer
* 3/4 cup flour
* 3 large eggs
* 1/4 teaspoon salt
* 1-2 cup fresh berries (raspberries, strawberries, or blackberries, for example)
* maple syrup (optional) or powdered sugar (optional)
Preheat oven to 400 degrees F.
Place the butter in a 9-inch glass pie plate and place the dish in the oven for a few minutes to allow the butter to melt.
In a blender, combine the creamer, flour, eggs, and salt, and blend until smooth.
Remove the baking dish from the oven and increase the oven temperature to 425 deg F.
Spread the melted butter around the dish, pour in the batter, and return the dish to the oven.
Bake for 20 minutes.
Reduce the oven temperature to 325 deg F and bake for 8 to 10 minutes more.
Remove from the oven, and let the pancake cool slightly.
Garnish with fresh berries.
Serve with warm maple syrup or powdered sugar if desired.
