~Pink Lemonade Cheesecake
Ingredients:
Pink Lemonade Cheesecake
---Lemon Cookie Crust---
11 lemon sandwich cream cookies, crushed
3 tablespoons butter, melted
---Pink Lemonade Filling---
24 ounces cream cheese
3/4 cup granulated sugar
5 teaspoons cornstarch
4 eggs
1 egg yolk
3/4 cup pink lemonade, frozen concentrate, thawed
2 teaspoons vanilla extract
2 drops red food coloring, optional
---Pink Lemonade Glaze---
1/3 cup pink lemonade, frozen concentrate, thawed
4 teaspoons lemon juice
1 tablespoon cornstarch
1 drop red food coloring, optional
lemon slices
Directions:
1. Lemon Cookie Crust: In a small bowl stir together crushed cookies and melted butter until well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan. Set aside.
2. Pink Lemonade Filling: In a large bowl combine cream cheese, sugar and cornstarch. Beat with an electric mixer until smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in lemonade concentrate, vanilla extract, and if desired, food coloring. Pour the cream cheese mixture over the crust.
3. Bake at 350 degrees F for 15 minutes. Lower the temperature to 200 degrees F and bake for 1 hour and 10 minutes or until the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the inside edge of the pan. Turn the oven off; return the cake to the oven for an additional 1 hour. Chill, uncovered, overnight.
4. Pink Lemonade Glaze: In a small saucepan stir together lemonade concentrate, lemon juice, cornstarch, and if desired, food coloring. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Pour over cheesecake. Garnish with lemon. Chill until serving time.

~Pink Lemonade Spritzer
2. In a shallow dish, add a small amount of water or lemonade spritzer.
4. Divide ice between 6 glasses. Pour lemonade over top. Serve immediately.

~Maura Tierney Curves
I have been getting lots of good feed back on Real Woman have curve post. For you Maura Tierney fans out there the quote from Neil LaBute was an old one. He said that in 2006 about his play off-Broadway play “Some Girls" in which Maura starred. I did a search to find where the author got that quote only to find it was older. Sadly I couldn't find a how to dress like... Maura Tierney. If I do I will make sure to post it. :)

~Pink Lemonade Pound Cake
1 (12-ounce) container Minute Maid frozen pink lemonade concentrate, thawed and divided
3 large eggs
1 teaspoon vanilla extract
1/8 teaspoon red food coloring
1 (3-ounce) package Philadelphia cream cheese, softened
1/2 cup Country Time pink lemonade drink mix
1 cup Land O' Lakes sour cream
2 cups confectioners' sugar
- Preheat oven to 325°. Spray a 10-inch loaf pan with baking spray with flour. Line bottom of pan with parchment paper; set aside.
- In a large bowl, combine cake mix, 3/4 cup pink lemonade concentrate, eggs, vanilla and red food coloring; beat at medium-high speed with an electric mixer for 2 minutes. In a separate medium bowl, combine cream cheese and drink mix; beat with an electric mixer on low speed for 1 minute, or until smooth; add sour cream and mix to combine. Add cream cheese mixture to cake mixture; beat to combine. Pour batter into prepared pan, smoothing top.
- Bake for 25 minutes; cover with aluminum foil and continue baking for an additional 1 hour 10 minutes, or until a wooden pick inserted near center comes out clean. Remove from oven and cool on a wire rack for 30 minutes. Remove from pan to cool completely.
- Meanwhile, in a medium bowl, whisk together 1/4 cup of the remaining pink lemonade concentrate and confectioners' sugar until smooth. Use any remaining concentrate as desired. Pour glaze over cooled cake.
