Ingredients
* 1 1/3 cups all-purpose flour
* 2 tablespoons cocoa powder
* 1 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1/2 teaspoon salt
* 1/4 cup butter, room temperature
* 1 cup sugar
* 2 eggs
* 2 tablespoons buttermilk
* 2 teaspoons apple cider vinegar
* 1 teaspoon vanilla extract
* 1 tablespoon red food coloring
*
For the Cream Cheese Frosting:
* 1 pound cream cheese, softened
* 2 sticks butter, softened
* 1 teaspoon vanilla extract
* 4 cups powdered sugar
* 3/4 cup finely chopped pecans, optional
Directions
Preheat oven to 375 degrees F.
Mix together flour, cocoa powder, baking powder, baking soda and salt in a small bowl.
Cream together the butter and sugar until light and fluffy, about 3 minutes. Add the eggs 1 at a time. Then beat in the buttermilk, vinegar, vanilla and red food coloring. Once combined, add the dry ingredients to wet. Mix until thoroughly combined.
Onto a parchment lined sheet tray, drop batter using an ice cream scoop, forming 2-inch round circles.
Bake for 10 minutes, until baked through. Cookies should be cake-like and light. Allow to cool for a few minutes on the baking sheet, then remove to a wire rack to cool completely.
For the Cream Cheese Frosting:
In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.
Spread the cream cheese frosting between 2 cooled cookies and roll the edges in finely chopped pecans, if desired.

~13 Going on 30...Week-End
Phew it's been a busy last few weeks for me. I haven't been able to blog much, but I still wanted to get out your week-end movie. So here it is ! I love this one let me say...13 going on 30!
A 13 year old girl plays a game on her 13th birthday and wakes up the next day as a 30 year old woman.
"Flirty, Fluffy at 30 Kiss Marshmallow Cookie"
* 3 tablespoons cornstarch
* 3 tablespoons confectioners' sugar
* Vegetable oil cooking spray for pans
* 1 package (2 1/2 teaspoons) unflavored gelatin
* 1/3 cup cold water for gelatin, plus 1/4 cup for syrup
* 1 cup granulated sugar
* 1/2 teaspoon pure vanilla extract
* Red food coloring
* 2 ounces bittersweet chocolate, melted
Directions
1. Mix cornstarch with confectioners' sugar in a small bowl. Coat two rimless baking sheets with cooking spray. Cut parchment to fit pans, draw 1 1/4-inch circles, and place on baking sheets, ink side down; spray with cooking spray. Dust with cornstarch mixture to cover completely; shake off excess. Sprinkle gelatin over the 1/3 cup cold water in a mixer bowl. Let stand to soften, about 5 minutes.
2. Heat remaining 1/4 cup water and the granulated sugar in a small pan over medium-high heat, stirring, until dissolved. Place a candy thermometer into syrup; wipe sides of pan with a wet pastry brush if crystals have splattered up. Boil, without stirring, until temperature reaches the soft-ball stage (238 degrees). Remove from heat; add to softened gelatin. Hand-stir with the whisk attachment a few seconds to cool; place bowl on mixer stand. Whisk on medium-high until soft peaks form and mixture holds a shape, 8 to 10 minutes.
3. Whisk in the vanilla and a small drop of red food coloring (for pale pink). Transfer half the mixture to a pastry bag with a 1/2-inch tip (such as Ateco #806), and pipe kisses inside circles on baking sheets.
4. Add another drop of food coloring to the mixture in the bowl, return to mixer, and whisk to blend. Transfer marshmallow mixture to the pastry bag, and pipe remaining kisses.
5. Let stand at room temperature until set, about 4 hours. Store in an airtight container at room temperature up to 2 days.
6. To assemble, place a small dab of melted chocolate on each cookie, and top with a kiss. Let stand to harden. Store airtight at room temperature up to 1 day. Serve at room temperature.
Makes 100 cookies

Directions
1. Cream butter, sugar, and vanilla in a mixer bowl on medium speed. Beat in flour and salt until just combined. Shape into a disc; wrap in plastic wrap; refrigerate until firm, at least 2 hours or up to overnight.
2. Line baking sheet with parchment paper. Roll out dough on a lightly floured surface to about 1/8 inch thick. Cut out with a 1 1/4-inch round cookie cutter; transfer to prepared pan. Freeze 30 minutes to harden.
3. Preheat oven to 325 degrees. Bake until cookies just begin to brown around the edges, 16 to 18 minutes. Let cool briefly on parchment, then transfer to a wire rack to cool completely. Store in an airtight container at room temperature up to 5 days.

CRUST:
2 cups graham cracker crumbs (about 14 crackers)
1/3 cup granulated sugar
¼ tsp ground cinnamon
¼ lb (1 stick) unsalted butter, melted
FILLING:
½ cup half and half cream
15 ounce can unsweetened pumpkin puree (not pie filling)
1 cup light brown sugar, lightly packed
¾ tsp kosher salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
3 extra-large egg yolks
1 package (2 tsp.) unflavored gelatin
1 medium ripe banana, finely mashed
1 tsp finely grated orange zest
½ cup cold heavy whipping cream
2 Tbs granulated sugar
TOPPING:
1 cup (½ pint) cold heavy whipping cream
¼ cup granulated sugar
½ tsp pure vanilla extract
orange zest, optional
1. Preheat oven to 350°F.
2. Prepare crust: Combine crust ingredients in a bowl and mix well. Pour into an 11-inch tart pan with a removeable bottom and press evenly into the sides and then the bottom. Bake for 10 minutes and then cool to room temperature.
3. Prepare filling: Set heat proof bowl over a pan of simmering water. Add half & half, pumpkin, brown sugar, salt, cinnamon, and nutmeg to bowl. Whisk until mixture becomes hot, about 5 minutes.
4. Whisk egg yolks in a separate bowl. Stir a spoonful of the hot pumpkin into the egg yolks to heat them. Then stir in another spoonful. Keep adding spoonfuls until the egg mixture becomes warmed. Scrape the pumpkin/egg mixture back into the heated bowl and stir well. Heat the mixture over the simmering water for another 4 to 5 minutes, until it begins to thicken, stirring constantly. You don’t want the eggs to scramble. Remove from heat.
5/ Dissolve gelatin in ¼ cup of cold water. Add the dissolved gelatin, banana and orange zest to the pumpkin mixture and mix well. Set aside to cool.
6. Whip heavy cream in the bowl of an electric mixer fitted with a whisk attachment until soft peaks form. Add the sugar and continue to whisk until you have firm peaks. Carefully fold the whipped cream into the pumpkin mixture and pour it into the cooled tart shell. Chill for 2 hours or overnight.
7 For the topping: Whip the heavy cream in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and continue to whisk until you have firm peaks. Pipe or spoon the whipped cream decoratively on the tart and sprinkle, if desired, with orange zest. Serve chilled.
