~A Charlie Brown Thanksgiving...Weekend!
It's almost that time. I love the holidays & go crazy watching all the movies. So here's is a great one for all of you. :)
I must admit I have never really been a huge fan of sweet potatoes. Until the year I tried Snoopy's Sweet Potato Pumpkin Mousse. There are no words for it. :)
This mousse is elegant, continental, sophisticated and incredibly easy. There’s no cooking, no whipping and no fuss, and yet the results are as creamy and decadent as a confection that took hours to prepare. Made with the delectable flavor of sweet potatoes.
Ingredients:
1 can (15 ounces) cut sweet potatoes in syrup, drained (1/4 cup syrup reserved)
1 can (15 ounces) 100% pure pumpkin purée
1/4 cup honey
1/2 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
2 cups sweetened* whipped cream or whipped dessert topping
* Add a small amount of table sugar to unsweetened whipping cream while whipping.
Preparation Time: Approximately 5 minutes
Preparation:
Purée sweet potatoes and reserved syrup in a food processor. Add pumpkin, honey, pie spice, and cinnamon, and process until blended and smooth. Scrape into a large bowl.
Fold in the whipped cream (don’t overmix) and serve, or store mousse tightly covered in the refrigerator for up to 24 hours.
Servings: 6

~Can't Buy Me Love...Week-End
I give you this weekend the movie that made me first love Patrick Dempsey. Plus as a bonus it was shot here in Tucson!
Can't Buy Me Love (1987)
Ronald Miller is tired of being a nerd, and makes a deal with one of the most popular girls in school to help him break into the "cool" clic. He offers her a thousand dollars to pretend to be his girlfriend for a month. It succeeds, but he soon learns that the price of popularity may be higher than he expected.
Watch with a serving of ....Sexy Hot Chocolate McDreamy Mousse
Recipe courtesy Giada De Laurentiis
Ingredients
* 4 large eggs, separated*
* 1/2 cup sugar
* 1/4 cup (1/2 stick) unsalted butter, cut into 1/2-inch pieces
* 1/4 cup water
* 4 teaspoons Chili Oil, recipe follows
* 7 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
* Spicy Whipped Cream, recipe follows
Directions
Whisk the egg yolks, 1/4 cup of sugar, butter, 1/4 cup of water, and chili oil in a large metal bowl to blend. Set the bowl over a saucepan of simmering water (do not allow the bottom of the bowl to touch the water); whisk constantly until the mixture is very thick and frothy, about 3 minutes. Add the chocolate and stir until melted and smooth. Remove from the heat.
Using an electric mixer, beat the egg whites in another large bowl to soft peaks. Gradually add the remaining 1/4 cup of sugar, beating until stiff and glossy peaks form. Remove the chocolate from over the water. Fold 1/3 of the meringue into the warm chocolate mixture to lighten, then fold in the remaining meringue.
Cover tightly with plastic wrap and refrigerate until set, at least 3 hours or overnight. Spoon the mousse into 6-ounce bowls. Top with spicy whipped cream and serve.
Chili Oil:
2 cups olive oil
4 teaspoons dried crushed red pepper flakes
Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
Yield: 2 cups
Prep Time: 2 minutes

1/4 cup granulated sugar
Cocoa powder
Ground cayenne pepper
